Chablis is all about Chardonnay and its pure austere, lemon, mineral dimension that this particular terroir can deliver. Until a few years ago, Chablis was the northernmost part of Chardonnay for still wines. Therefore, the grapes' optimal ripening was challenging. With climate change affecting the planet, optimal ripening seems not to be the case since the temperature and ripening period has increased. Yet, other challenges like hailstorms, frost and rainy weather determine the quality and the quantity of the grapes. So, vintages still play a massive role in the outcome quality and the sale prices and 2019 was a great vintage!
Appearance: Attractive, deep, shiny lemon colour.
Nose: The aromas are exciting with a pure floral bouquet of white blossoms and honeysuckle, continuing with a lemon signature, apple, a layer of butter and cheese and a deep mineral dimension.
Palate: It is fresh yet ripe with tropical fruits and wet gravel. All the flavours are intense and fill up the palate. The acidity is high, and the aftertaste is long. It has the ability to refresh the palate and the spirit!
Drink or Hold: It is fantastic now but can age for a long time.
Food Pairing: All versions of chicken.
