Arguably, the white wines from Santorini and especially those are made from Assyrtiko start showing their true qualities after the third year of their life.

Appearance: Medium gold colour.

Nose: The aromas are unusually intense for Santorini, with a profound mineral nature, saltines, pear drop, apricot and tropical hint.

Palate: It has a creamy texture and has high acidity. Honey, petrol and lemon are persistent. It has a good balance and an almost long-lasting aftertaste.

Drink or Hold: It is enjoyable now and for the next five years.

Food Pairing: Fish in a salt crust.
