Vau de Vey is a notable Premier Cru vineyard on Chablis’ left bank, forming a 40-hectare enclave alongside Vaux Ragons. Due to its south-eastern exposure, it receives only morning sunlight, making it one of the region’s cooler Climats, further influenced by strong northern winds. This results in a slower ripening process for the grapes.
The vineyard’s steep slopes present both challenges and uniqueness—some areas are too steep for mechanised work, requiring manual cultivation. Beneath the surface, deep Kimmeridgian marl forces the vines to struggle, enhancing the wines’ mineral complexity.
Chablis Premier Cru wines come from 79 lieux-dits, grouped into 40 official Climats, of which 17 are considered flag-bearing Climats. These Climats serve as regional benchmarks, with wines from adjacent vineyards either carrying their own name or adopting that of the dominant Climat.

👃 Nose: Expressive and complex, with a smoky core, flinty minerality, and layers of stone fruits, quince, and melon. Delicate floral notes of lemon blossom add elegance.
👅 Palate: Almost full-bodied, with vibrant acidity and dense, well-defined flavours of crisp apple, ripe peach, vanilla, and a subtle smokiness.
💞 Finish: Long, lingering, and deeply satisfying.
