What a surprise! Honestly, I had in mind a new world fruit bomb, and instead of that, I tasted an Australian Santorini. All the typical characteristics of the variety are present except maybe the Santorini’s saltiness. With the eyes closed (even the colour supports this argument), let’s say it is something between Riesling and Assyrtiko. 

Appearance: The colour is deep lemon-green.

Nose: Some ripe and developing aroma needs air to open up and express all the aromatic profile. Lime, jasmine, apple, peach, white pepper and smokiness are playing together.

Palate: It is youthful with energy, high lemon acidity, full body and long-length aftertaste.

Drink or Hold: It is enjoyable now but with good ageing potential.

Food Pairing: It is perfect with trout in the oven with lemon sauce.
