Emidio Pepe is one of my favourite Italians winemakers. His philosophy reflected in his wines which are complex, authentic, with depth and truly unique character. Biodynamic cultivation, foot pressed grapes and fermented in small cement vats using natural yeasts. Then bottled unfiltered, both whites and reds, and matured for some years in the bottle. When they are ready to relish in the market are decanted one by one by hand in a new bottle leaving the sediments out. How much love would someone have for his legacy doing all this process?
Appearance: The colour is medium golden.
Nose: It has medium aromatic intensity with complexity beyond the neutral character of the variety with roasted nuts, yeasts, a lot of spices and minerality.
Palate: On the other hand, it has pronounced flavour intensity on the palate, which is the reason to come through with heavy dishes aside. The acidity is high, the body medium with medium to the high intense and complex aftertaste.
Drink: It is delicious now but can age for at least 4 more years.
Food Pairing: If you search for a unique wine and food adventure, then pair it with lamb en papillote and prepare yourself for what will follow.
