The House of Bollinger was founded in 1829 in the Aÿ region of Campania by Athanase de Villermont, Paul Renaudin and Joseph Bollinger. From the beginning, Joseph Bollinger laid the foundations for the high quality and excellence that characterise Bollinger Champagne to this day. Joseph Bollinger was the grandson of Jacques Bollinger, and after his death, his widow, Lily Bollinger, took over the business and was instrumental in its reputation and growth.  

Her iconic saying, "I drink it when I’m happy and when I’m sad. Sometimes I drink it when I’m alone. When I have company, I consider it obligatory. I trifle with it if I’m not hungry, and I drink it when I am. Otherwise, I never touch it unless I’m thirsty." reflects the family's passion and dedication to champagne.

🍷 Appearance: It has a very attractive medium, bright golden colour with fine bubbles.

👃 Nose: It is intense with a lot of complexity, starting from ripe lemon, peach, biscuits, sourdough and baked bread aromas.

👅 Palate: It is light-bodied and has fine mousse. It has excellent balance and texture, with tones of autolysis aromas. 

💞 Finish: Medium length, complex and delicious finish.
