It is a limited edition sparkling wine. The harvest took place in 2006. Then the wine spent 12 months in stainless steel vats on its fine less for natural stabilisation. The second fermentation was made by the Classic Method and rested in the cellar ten years before the dégorgement in 2017. 

There is a lot of effort behind that spectacular wine, and it deserves every single pen.

Appearance: The colour is shiny deep gold with fine persisted bubbles popping on the surface.

Nose: The aromatic intensity is pronounced and charming. It is ripe and complex, full of jasmine, lime, pineapple, quince, cheese, almond, butterscotch and honey.

Palate: It is dry with high acidity. The mousse is creamy. The structure is excellent, and the flavours of nuts, cream, peach, pear and honey are leaving an intense mark. The aftertaste is endless. 

Drink: It is at its best.

Food Pairing: All kinds of recipes would fit well, sushi, tikka masala chicken, cheeses, stuffed vegetables, even pies.
