I love my job, but sometimes I love it twice as much! Although we opened on the same day two bottles, one in lunch and one at dinner time, we found out that both were completely different. The first one was outstanding with a complex and mature style yet still developing, and the other one was fully developed with many sweet and honey notes. Here, the tasting notes are for the first one that was the best example.
Appearance: The colour is deep golden with amber hues, bright and vivid.
Nose: It has intense aromatic intensity with an extremely complex character like citrus, tropical and stone fruits combined with earthy aromas such as mushrooms, kerosene and notes of noble oxidation such as toffee caramel.
Palate: It is dry, with moderate acidity, round and full-body, with notes of honey and spices. The finish is long with an exciting taste of Chios mastic.
Drink: Drink it now is not suitable for further ageing.
Food Pairing: Try it with vegetable risotto with squid and a white cream based on pistachios and Chios mastic.
