Santorini of Domaine Sigalas is always pointed out as the fresher and fruitier version on the island, yet highlighting the mineral signature. And that was the beauty and distinctiveness. Furthermore, this freshness makes the wine ageing perfectly and one of the most longevity Assyrtiko. In 2020, the founder Paris Sigalas sold everything to the shipowner (60%) Thanasis Martinos and (40%) Kir-Yianni winery. The management is given to Stellios Boutaris of Kir-Yianni winery. Even if, in the beginning, it seemed that Paris Sigalas would play a role finally left and started a new venture. It remains to be seen whether this change will affect the style of the wines.

Appearance: Medium lemon colour.

Nose: It has an uncommon aromatic intensity for Assyrtiko, especially from Santorini. Probably the vintage was ideal for fruitier wines. This captivating mineral dimension of Santorini is a base upon which all the aromas are developed, like jasmine, lemon, apple, fresh-cut grass, and even elderflower.

Palate: It is slightly oily and full-bodied. The high acidity gives energy and the fresh flavours palatability. The aftertaste is almost long.

Drink or Hold: It is approachable now and for the next 6 years.

Food Pairing: Goat cheese, stir-fried fish.
