Savatiano 2014, Domaine Papagiannakos

I think that not many people expected Savatiano to age so lovelily, even the winemakers themselves. And the fact that most of the top Attica's producers have started to explore the variety's limits make the terroir vibrate. We are always like to scout for the next big thing, the next wine variety, the next wine region, the producer who will intrigue us with distinctive wines. Well, I am sure nobody will have seen that coming when Savatiano and Attica will reach the whole of fame.
Appearance: Pale amber colour.
Nose: The deliberate oxidation is notable but with such a beautiful way full of roasted nuts like almond, marzipan and hazelnut. The fruits are still with lemon, lime, apple, peach and white blossoms with nutmeg and ginger to add a spice dimension.
Palate: It is complex and excellent balanced. The flavours are intense and fill up every taste bud. It is a full-body wine with high acidity, and obviously, something has changed in the winery's approach. The aftertaste is stunningly long.
Drink or Hold: It is remarkable now, but with great ability to enhance more.
Food Pairing: A plate with mature cheeses and quality cold cuts will pair perfectly.
