Date Tasted: 4/2021

What a brilliant wine. Crystal aromatic purity, each variety leaves its mark with excellent evolving, and I think it expresses South France's terroir.

Appearance: Deep and bright ruby colour.

Nose: It was pretty complex with ripe fruits like raspberry, sour cherry, blackberry and blueberry. Some floral notes as well, like violet and rose, even red apple. Many spices and tertiary earthy aromas are adding extra layers.

Palate: It was very refined with juicy tannins and high acidity creating balance. Very taste still showing the complexity with an almost long fruity aftertaste.

Drink: It is so polished at this turn of its life, and better drink it even if it has some years ahead.

Food Pairing: Slow-cooked beef versions will be paired perfectly.
