The source of the grapes is a single vineyard with over 150 years old vines located in the district of Fira facing the caldera rim and producing a rare and unique fruit. Maturation with the gross lees for 2 years in a stainless steel tank. A period of cellaring adds more complexity and layers to this textbook wine.
Appearance: Vibrant and bright, pale lemon colour.
Nose: Once it opens up, it will hit you with tonnes of apricot, orange, grapefruit, flint, white pepper and jasmine.
Palate: It has great power. It is full-bodied with a creamy texture. The acidity is high and, despite the high condensation, needs a couple of years to integrate fully. The aftertaste is dense, sweet and spicy.
Hold: Better keep it in the cellar for at least 4 years.
