The source of the grapes is centenarian vines. The fermentation takes place in large, primarily second-use oak barrels. The wine is transferred into stainless steel tanks when fermentation finishes for more extended lees stirring. Total ageing on the lees for 16 months followed by ageing for four months in the bottle before being released in the market.
Appearance: Vibrant and bright, pale lemon colour.
Nose: It is like you smell a summer breeze from the sea with intense iodine. Charming hints of biscuits with a lovely floral layer and a combination of lemon and volcano rocks. It is fresh and needs time to open up, but it is gifted with depth and complexity.
Palate: It is a full-bodied wine yet lacks heaviness. The high acidity is well integrated with a lot of intense fruit that drives a balanced outcome. However, it still shows depth and complexity, the sea-like character, and a thick layer of sweet spices. The aftertaste is refreshing, salty, lemon and long.
Drink or Hold: It is fantastic now, but if you can wait for 3-4 years, it will reward a lot more.
Food Pairing: Sea bass in a salt crust.
