Santorini 2015, Domaine Sigalas
Date Tasted: 5/2020
This wine is at the beginning of the best drinkable period from one of the top producers on the island.
Appearance: Deep gold in colour.
Nose: Medium aromatic intensity, complicated enough and terroir-driven, with aromas like lemon, flint, white pepper and wet gravel to be some of them.
Palate: Salty on the palate, start showing some ageing signs with flavours like almond, butterscotch, dried fruits and honey. The acidity is high, full-body with a solid structure and a long-lasting pleasant aftertaste.
Drink or Hold: Of course, it is enjoyable now, but I recommend opening it in the next 2-4 years.
Food Pairing: What grows together goes together, so fava with herbs is an excellent choice.
