Silex 2017, Domaine Didier Dagueneau
Date Tasted: 1/2021
Honestly, I did not know what kind of wine I had in front of me, and I treated it like an ordinary Sauvignon Blanc. I had to drink half a glass first to realize the greatness of that bottle. That is a warning to avoid making the same mistake. Decanting for at least two hours or even longer is obligated if possible, the serving temperature should be 14 C°, and the perfect food pairing is celery root puree, no matter if you choose meat or fish as a side dish.
All the above instructions are applied to allow the wine to express itself since it is an esoteric wine. You will admire the unique complexity of wine from Sauvignon Blanc, but the ultimate experience is on the palate since balance and texture are magnificent!
Worth to search on the internet to read about this legendary and genius winemaker. It will help you to figure out why the wine is what it is.
Appearance: The colour is a pale lemon.
Nose: It is charming, and the nose is stuck into the glass, which gushes apple, honeysuckle, lemon, pineapple, grass, fennel, chalk, and bread dough.
Palate: It has a depth with excellent texture and structure, high acidity, medium body and long mineral aftertaste. In short, a poem in the bottle.
Drink or Hold: It is one of a few wines of Sauvignon Blanc, which can age for a decade or more.
Food Pairing: The winemaker used to pair his wines with bloody steaks, so I followed his rule. A sauté medium-rare rib-eye with celery root puree paired just perfect.
