Although when the wine was opened and served looked like it had passed away, all changed when it came to the first sip. It was alive and exciting, and it had run overtime quickly, showing a fully developed profile with some noble oxidation notes starting to appear. As we drank it, we had aside a salami with black pepper and a Swiss Gruyere that both matched perfectly. 

Appearance: The colour is medium bronze. 

Nose: It is not very impressive and smells mostly candied fruits, grilled nuts and some citrus fruit notes. 

Palate: It is dry with flavours like quince, apricot, caramel and spices, medium acidity, light body, and medium honeyed fruits aftertaste. 

Drink: Drink it now is not suitable for further ageing.

Food Pairing: Try it with a stuffed cold cut with black pepper and semi-hard yellow cheeses.
