One thing is sure: the experiment failed. The volatile acidity is at such a high level that you cannot ignore it. Wine is a liquid made in order to deliver pleasure, and it is always welcome to explore the limits, but this must stop when the limits are unpleasant and have nothing to add. So, in my opinion, wine like this one is useful only to experience how wine should not be.

Appearance: The colour is pale garnet.

Nose: From the first moment, the volatile acidity was at a high level. Still, some red fruits like redcurrant, raspberries and many floral notes with apricot and honey made the wine affordable. But after a half-hour decanting, the low concentration level helps the volatile acidity dominate everything.

Palate: It is dry, with high acidity, medium body, low tannins and short aftertaste.

Drink: I would suggest trying a glass first and having another wine bottle for reserve if you cannot drink it.

Food Pairing: Do not decant it and prepare some mushrooms with balsamic vinegar on top.
