My curiosity and marketing promotion made me wonder how this wine would taste? And it is a reasonable question since it is not common to let a rosé wine for two years in second used oak barrels and eight years ageing in the bottle, even if the noble Xinomavro grape is the giver. Impatiently high expectations were developing while I was awaiting its arrival. Maybe, one finds interesting the heavy oaked profile, but the finish was quite bitter and unpleasant and covered all the flavours on the table, even the most intense. 

Appearance: The colour is a deep pink with orange hues, a mark of its age.

Nose: It has developed a medium intense nice aromatic complexity with pronounced oak notes such as cedar, toasted wood, roasted sesame, a layer of spices and dried fruits mixed with fruity notes like red cherry and mango.

Palate: It is dry with high acidity, medium body, some interesting chewy tannins and a medium-plus xyloid aftertaste. 

Drink: Drink it now, not suitable for further ageing.

Food Pairing: We tried several dishes, and by far, the better combination was a medium tuna fillet with a spiced mashed Peruvian potato.
