Château Yon-Figeac 2000, Grand Cru Classé

This excellent wine had an unlucky taste after the Cuvée Evdemon 2016, and I dare to say that it stayed in Evdemon shadow. Nevertheless, the wine remains a delicious choice.
The estate is one of the larger single-plot estates on the Bordeaux right bank, in the heart of Saint-Émilion, with 25 hectares (62 acres) of vines on sand and clay soils with iron deposits. Stainless steel vats used for the fermentation, and then ageing 40% in new and 60% in first or second use French oak barrels for 12 months.
Appearance: The colour is deep garnet.
Nose: It has pronounced aromatic intensity with a complex character of black fruits, green bell pepper, liquorice, vanilla, rosemary, dill and cigar box.
Palate: It continues with the same complexity and intensity with mushroom, leather, meaty, wet leaves and bitter chocolate. It is dry, with high acidity, medium silky and firm tannins, full body and almost long aftertaste.
Drink: Drink it now is not suitable for further ageing.
Food Pairing: Try it with moelleux with salty caramel.
