Kayafas is a premium wine from Thymiopoulos Vineyards. It comes from a single xinomavro vineyard with 44-year-old vines in limestone soil. It is one of the noblest expressions of Xinomavro and has remarkably tamed tannins.

👃 Nose: Exceptionally elegant and complex, evolving with airing. It develops with delicate aromas of red berries, particularly cherry, along with subtle notes of tomato, olives, and a green herbal layer. The wine benefits from whole bunch fermentation, adding depth and nuance. A true reflection of aristocratic winemaking.

👅 Palate: Remarkably balanced, displaying nobility and power in perfect harmony. The wine is Pinot Noir-like, offering a medium body, refined high tannins, and high acidity that is seamlessly integrated. Intense flavours of juicy red berries, ripe cherry, plum, and olives, with hints of mushroom and spices like cinnamon and cumin, contribute to its depth and sophistication.
